化學性質(zhì)
無色至白色結(jié)晶或結(jié)晶性粉末，通常含7個分子結(jié)晶水，無臭，有特有的類似香菇的鮮味。熔點不明顯，240℃褐變，250℃分解。對酸、堿、鹽、熱均穩(wěn)定。有較強的吸潮性，易溶于水(25℃，25%)，5%的水溶液pH值為7.0～8.5，微溶于乙醇、丙酮和乙醚。小白鼠經(jīng)口LD5010g/kg，ADI不需特殊規(guī)定(FAO/WHO，1994)。
